Mushroom Stuffed Turkey Meat Loaf
(Serves 4)
Ingredients:
1 pound Norbest Ground Turkey, defrosted
1 egg
1/2 cup seasoned bread crumbs
1/4 cup water
1 tablespoon dried onions
1 tablespoon green peppers, chopped
1/8 teaspoon pepper
2 tablespoons catsup
1 teaspoon prepared horseradish
1/2 teaspoon prepared mustard
Stuffing
1 tablespoon margarine
1/4 cup chopped onions
1/4 pound sliced mushrooms
2 slices whole wheat bread, torn into cubes
1 teaspoon dried parsley
1/4 teaspoon dried thyme
Dash salt
Dash pepper
Directions:
In a small skillet, melt margarine over medium heat. Add chopped onions and sliced mushrooms; saute for 2 minutes. Toss in bread, parsley, thyme, and a dash of salt and pepper. Stirring constantly, cook until bread is lightly browned. Set aside. Preheat oven to 350 degrees F. Combine all Ingredients: of meat loaf mixture. Press half of mixture into lightly greased loaf pan. Top with 2 cups mushroom stuffing and spread remaining meat mixture over stuffing. Bake for 45-60 minutes, or until neat is no longer pink in center of loaf.
